Adobo Grilled Chicken Salad in a Tortilla Bowl

Filipino Adobo Ingredients
  •     4 (10-inch) whole-wheat or multi-grain tortillas
  •     2 tablespoons olive oil, plus more for drizzling
  •     1/2 medium yellow onion, chopped
  •     4 garlic cloves, minced
  •     Coarse salt and freshly ground black pepper
  •     3 medium tomatoes, chopped
  •     2 chipotle chiles in adobo, chopped (remove the seeds to make it less spicy), plus 2 tablespoons the adobo sauce
  •     1/2 cup water
  •     1 (15-ounce) can pinto beans, drained and rinsed
  •     5 cups baby spinach leaves or mixed mesclun greens
  •     4 ounces feta cheese, crumbled (1/2 cup)
  •     4 Adobo Grilled Chicken Breasts, sliced, recipe follows
  •     1/4 cup chopped fresh cilantro leaves
  •     Lime wedges, for serving

  •     1 tablespoon lemon pepper
  •     1 tablespoon garlic powder
  •     1 tablespoon onion powder or flakes
  •     1 tablespoon dried oregano
  •     1 tablespoon dried parsley flakes
  •     1 tablespoon achiote powder
  •     1/2 tablespoon ground cumin
  •     1 tablespoon salt
  •     6 boneless skinless chicken breasts
  •     Nonstick cooking spray or oil

Filipino Adobo Directions
Preheat the oven to 400 degrees F.

Place a small dish of water next to your work surface. To make the tortilla bowls, place 4 empty (15-ounce) cans, open side down, on a baking pan. Using a pastry brush, soften the tortillas by brushing both sides with a little water, and then brush with 1 tablespoon of the olive oil. Drape the tortillas over the cans and bake until firm, about 5 to 7 minutes. Using tongs, turn the tortilla bowls right side up, discard the cans, and continue to bake until golden and crisp, another 4 minutes.

Heat the remaining tablespoon of oil in a large skillet over medium heat. Add the onion and cook until soft and translucent, about 4 minutes. Stir in the garlic and cook until it's fragrant, about 1 minute. Season with salt and pepper. Add the tomatoes, chipotles with adobo sauce, and 1/2 cup water, cooking until slightly thick, about 5 minutes, stirring occasionally. Mix in the beans and cook until heated through, season with salt and pepper. Remove from the heat.

Place the tortilla bowls right side up on plates and fill each with a handful of greens. Divide the bean mixture between the tortilla bowls and top with a sprinkle of feta. Fan the sliced chicken on top and garnish with chopped cilantro. Drizzle with a little olive oil and serve with lime wedges. Enjoy !

Filipino Adobo INGREDIENTS
  • 1/2     cup chopped onion
  • 1/3     cup lime juice
  • 6     cloves garlic, coarsely chopped
  • 1     teaspoon dried oregano
  • 1     teaspoon ground cumin
  • 1/2     teaspoon dried thyme
  • 1/4     teaspoon ground red pepper
  • 6     boneless skinless chicken breasts
  • 3     tablespoons chopped fresh cilantro
Filipino Adobo PREPARATION:

    Combine onion, lime juice and garlic in food processor. Process until onion is finely minced. Transfer to resealable food storage bag. Add oregano, cumin, thyme and red pepper; knead bag until blended. Place chicken in bag; press out air and seal. Turn to coat chicken with marinade. Refrigerate 30 minutes or up to 4 hours.
    Spray grid with nonstick cooking spray. Prepare grill for direct cooking. Remove chicken from marinade; discard marinade. Place chicken on grid 3 to 4 inches from medium-hot coals. Grill 5 to 7 minutes on each side or until chicken is no longer pink in center. Transfer to clean serving platter and sprinkle with cilantro. Enjoy !

Delicioso Adobo Grilled Chicken
Filipino Adobo Ingredients
* 1 tablespoon lemon pepper
* 1 tablespoon garlic powder
* 1 tablespoon onion powder or flakes
* 1 tablespoon dried oregano
* 1 tablespoon dried parsley flakes
* 1 tablespoon achiote powder
* 1/2 tablespoon ground cumin
* 1 tablespoon salt
* 6 boneless skinless chicken breasts
* Nonstick cooking spray or oil


Combine all of the ingredients in a small glass jar with an airtight lid and shake to blend. Store in a cool, dry place for up to 2 weeks.

Season chicken with the adobo seasoning. Heat a grill pan to medium heat and spray with nonstick cooking spray or drizzle with oil. Place the chicken on the grill pan and cook for 3 to 5 minutes on each side depending on the size of the breasts.

When chicken is cooked through, slice 2chicken breasts for the fishy-dillas and reserve the remaining 4 for the chicken salad.

Note: This recipe for adobo is a staple seasoning for many of my Latin recipes. You can make a large batch, store it in an airtight container and use it as a flavor enhancer in your favorite dishes. Enjoy the chicken !

  • 1 spring chicken cut in serving sizes
  • 1/2 c. soy sauce (low salt)
  • 1/3 c. vinegar
  • 1 head fresh garlic
  • 8 to 10 pepper corn
  • 1 sm. bay leaf
  • 1/2 to 1 tsp. salt according to taste
  • 1/2 to 1 tsp. monosodium glutamate (Accent)
  • 1/3 c. sherry, optional
Mix all ingredients by hand in a pot. Marinate for about 5 minutes. Boil slowly and covered until meat is almost cooked. Do not stir. Remove cover. Stir and continue boiling until meat is tender. Serve hot with rice...enjoy the Filipino adobo !

Filipino Adobo INGREDIENTS
  • 1 chicken, cut up
  • 3-4 cloves garlic, crushed
  • 1 tsp. peppercorn, crushed
  • 2 bay leaves, whole
  • 1/4 c. soy sauce
  • 4 tbsp. vinegar
Saute garlic until light brown; add chicken, peppercorn, soy sauce, bay leaves for 10 minutes. Then add soy sauce and vinegar; cover for 1 1/2 hours on low flame. The filipino adobo of chicken is ready to serve...nice ! Enjoy the adobo !

  • 1 whole chicken (cut into eighths)
  • 1 whole garlic (chopped)
  • olive oil or vegetable/corn oil
  • 1 tsp ground black pepper
  • 4 whole black pepper cloves
  • 3 dried bay leaves
  • 1 cup soy sauce
  • 1 cup vinegar
  • 7-up or Sprite (optional)
  • 1 whole lemon (cut into 4) (optional)
Remember to wash your chicken very well. We recommend using the lemon (in ingredients) to scrub all over the chicken parts and rub some salt into it as well.

Heat oil and add all of the garlic, and cook until garlic is lightly browned. Add chicken and sauté until the chicken is beginning to tenderize.

Add ground black pepper, whole black pepper cloves, bay leaves, soy sauce, and vinegar, and let simmer for 25-35 minutes or until chicken is done.

Taste and adjust to suit your taste (should be a bit tangy). When chicken is tender, you may add some 7-Up or Sprite if you prefer a sweeter taste, and let simmer for 5 more minutes. The Filipino adobo recipe of chicken is ready to serve over rice...hmm nice ! Enjoy it !

Pork Chicken Adobo Recipe

Pork / Chicken Adobo Recipe
A great Filipino adobo recipe to try !
Filipino Adobo Ingredients:

*1/2 kilo pork cut in cubes + 1/2 kilo chicken, cut into pieces or
*choice of either 1 kilo of pork or 1 kilo of chicken
*1 head garlic, minced
*1/2 yellow onion, diced
*1/2 cup soy sauce
*1 cup vinegar
*2 cups of water
*1 teaspoon paprika
*5 laurel leaves (bay leaves)
*4 tablespoons of cooking oil or olive oil
*2 tablespoons cornstarch
*Salt and pepper to taste
*3 tablespoons water

Filipino Adobo Instructions:

*In a big sauce pan or wok, heat 2 tablespoons of oil then sauté the minced garlic and onions.
* Add the pork and chicken to the pan. Add 2 cups of water, 1/4 cup of soy sauce, vinegar, paprika and the bay leaves. Bring to a boil. Cover and simmer for 30 minutes or when meat is tender.
*Remove the pork and chicken from the sauce pan and on another pan, heat cooking oil and brown the pork and chicken for a few minutes.
*Mix the browned pork and chicken back to the sauce and add cornstarch dissolved in water to thicken.
*Add salt and/or pepper if desired
*Bring to a boil then simmer for an additional 5 minutes.
*Serve hot with the Filipino adobo gravy and rice...enjoy it !
